Brown Bag Apple Pie
When better dessert than a warm apple pie with locally grown apples.

Pie
  1. 1/2 cup granulated sugar
  2. 1 9” pie shell, unbaked
  3. 2 T flour
  4. 1/2 cup butter, melted
  5. 1 t cinnamon
  6. 1/2 cup granulated sugar
  7. 6 med baking apples (you can use several varieties) pared sliced
  8. 1/3 cup flour
Crust
  1. 2 cups flour
  2. 1/2 cup lard-chilled & cut into small pieces
  3. 3/4 t salt
  4. 1 stick butter, chilled & cut in to small pieces
  5. 1/2 t baking powder
  6. 6 t ICE water
Pie
  1. Mix ½ cup sugar, 2 Tbs. flour and the cinnamon together and toss with the apples.
  2. Heap into the pie shell.
  3. Combine butter, ½ cup sugar and ½ cup flour to make a thin paste.
  4. Spread paste over apples, coating evenly.
  5. Place pie in a brown paper bag and close securely with paper clips or staples.
  6. Place pie in center of the oven rack, taking care that the paper bag does not come in contact with any interior oven surface.
  7. Bake in pre-heated 400° oven for 1 hour.
  8. When pie is done, cut away the bag.
Crust
  1. Sift dry ingredients into bowl.
  2. With pastry blender, blend in lard and butter until pieces are small pea-sized.
  3. Add just enough ice water to hold dough together.
