Ginger Sorghum Cookies

Ingredients
  1. 3/4 Cup Unsalted butter, room temp
  2. 1 Cup Sugar—white or raw
  3. 1 Egg, room temp
  4. 1/3 Cup sorghum
  5. 1 tsp baking soda
  6. 1/2 tsp salt
  7. 2 1/2 tsp ginger
  8. 1 1/4 tsp cinnamon
  9. 2 cups Flour—half all purpose and half whole wheat
  10. Additional sugar for dusting.
Instructions
  1. Mix butter and sugar until creamy white, then add egg.
  2. Stir in sorghum.
  3. Sift dry ingredients together and add to first mixture. Mix well.
  4. Cover and chill for one hour.
  5. Roll dough into one inch balls. Then roll dough balls
  6. Bake 9 to 11 minutes at 375F or until lightly browned.
  7. Let cool for several minutes on baking sheet and then finish cooling on a rack.
Notes
  1. This old-fashioned recipe for a spice cookie has a special sweetener that is one of the members of the Slow Food Ark—sorghum!
