Ginger Sorghum Cookies

Ingredients
- 3/4 Cup Unsalted butter, room temp
- 1 Cup Sugar—white or raw
- 1 Egg, room temp
- 1/3 Cup sorghum
- 1 tsp baking soda
- 1/2 tsp salt
- 2 1/2 tsp ginger
- 1 1/4 tsp cinnamon
- 2 cups Flour—half all purpose and half whole wheat
- Additional sugar for dusting.
Instructions
- Mix butter and sugar until creamy white, then add egg.
- Stir in sorghum.
- Sift dry ingredients together and add to first mixture. Mix well.
- Cover and chill for one hour.
- Roll dough into one inch balls. Then roll dough balls
- Bake 9 to 11 minutes at 375F or until lightly browned.
- Let cool for several minutes on baking sheet and then finish cooling on a rack.
Notes
- This old-fashioned recipe for a spice cookie has a special sweetener that is one of the members of the Slow Food Ark—sorghum!
