Herb Roasted New Potatoes
  1. 20 New potatoes, golf ball size fresh from the garden or farmers market. A mixture is great.
  2. 2 oz olive oil or melted butter
  3. 1 tbsp. minced garlic
  4. 2 tbsp. Fresh rosemary and thyme or 1 tbsp. Dried Herbs de Provence
  5. 1 tsp salt kosher
  6. 1 tsp pepper
  7. parmesan cheese optional
  1. Scrub potatoes well
  2. Cut potatoes in half or quartered with skins on
  3. Toss with rest of the ingredients and lay on a sheet pan
  4. Sprinkle with a little water and turn potatoes up, so that the skin is touching the pan
  5. Bake 350° for 30-40 minutes, stir half way through baking. Edges should be slightly
  6. brown and middle soft
  1. Some of my favorite potatoes for roasting are carola and German butterball.
