Indian Spiced Lamb and Basmati Rice

Ingredients
  1. 2 oz Olive Oil
  2. 1/2 lbs Ground Lamb, Grass fed Beef
  3. or Ground Chicken thigh meat
  4. 1/2 tsp Ground Cardamom
  5. 1/2 tsp Ground Cinnamon
  6. 1/4 tsp Ground Cloves
  7. 1/2 tsp Cayenne
  8. 1 tsp Kosher Salt
  9. 2 cups Onion, 1/3” diced
  10. 1 cup Carrot, 1/3” diced
  11. 1 cup Celery or Celery root, 1/3” diced
  12. 1 cup Parsnip, 1/3” diced
  13. 1 tomato, diced or 2 tbsp tomato paste
  14. 1 1/2 cups Water, Vegetable or Meat stock
  15. 1 tsp Salt
  16. 1/2 tsp Black Pepper
Instructions
  1. In medium sauce pan heat on medium flame and add oil.
  2. Add meat and cook till cooked through.
  3. Add spices and cook till fragrant.
  4. Remove meat from pan.
  5. Add onions and cook till softened and edges are starting to brown.
  6. Add carrot, celery, parsnip and cook till softened.
  7. Add tomato, stir add rice.
  8. Stir and cook with cooking juices. If pan is starting to dry, add a little olive oil.
  9. Add meat, liquid, salt and pepper. Bring to boil, cover, reduce heat to low and cook on stove for 20 minutes.
  10. Liquid should be almost absorbed, remove from burner and let rest 10 minutes.
  11. Stir, adjust seasoning and enjoy!
Notes
  1. Here is a great winter dish. Actually, it also makes a great chilled summer salad.
