2 tbsp. olive oil
1 cup Onion, finely chopped
3 ea. Garlic cloves, minced
2 tsp. ginger finely chopped
1/2 tsp. cumin, ground
1 tsp. coriander, ground
1/2 tsp. curry powder
18 oz. Ground lamb or goat meat
1 tsp. Salt
1 cup Scallions
6 tbsp. Parsley, chopped
2 tbsp. Lemon grass, finely chopped
2 ea. Large Eggs
6 ea. Wonton skins, 6″ cut into 1/4’s

Cook onions in oil until softened
Add garlic and ginger cook to heat through
Add seasonings
Add meat and salt, stir until cooked through, chill 
When ready to make, add scallions, parsley, lemongrass and eggs, and adjust seasonings
Place 2 tsp. of mixture in wanton, seal shut with egg and crimp edges.
You can fry or cook in boiling salted water.
