Old Fashioned Beef Brisket

Ingredients
  1. 4 # Beef brisket
  2. Salt and black pepper
  3. 1 tbsp. Paprika
  4. 3 tbsp. Oil
  5. 2 ea. Medium onions, diced
  6. 1/2 cup Red wine
  7. 3 ea. Medium carrots, peeled and sliced
  8. 2 ribs Celery, diced
  9. 1 ea. Tomato, peel, seed and dice or 3 tbsp. Tomato paste
  10. 1 ea. Grilled bell pepper, peeled, ribbed and chopped
  11. 1 ea. Clove of garlic
  12. 2 cup Stock
  13. 1 ea. Bay leaf
  14. 1 tsp. Thyme
  15. 1/2 tsp. Cayenne or chipotle
  16. 2 cup Potatoes, wedged, red skin or yellow like German butterball
  17. 1 cup Mushroom caps, smal
Instructions
  1. Season meat (salt, pepper and paprika) and cook in dutch oven, sear till brown, drain fat and remove.
  2. Reduce heat and add onions, cook till softened.
  3. Deglaze with red wine and add carrots, tomato, pepper, garlic and cook till fragrant over medium heat.
  4. Add meat back to pan, add stock and rest of seasonings; liquid should be half way up the side of meat.
  5. Cover bake 2 hours, then add potatoes.
  6. Bake another 1 hour, then add mushrooms & finish cooking.
  7. Drain juice into measuring cup, skim fat, should have about 3 cups of liquid.
  8. Place in small pan and reduce if necessary. Or see short rib recipe for two other ways to finish broth/sauce.
  9. Serve over meat or on the side.
